The ingredients of the season are on full display in the healthy starters at True Food Kitchen Gaithersburg. The menu recently transformed in honor of fall, just as it does every time the temperature starts to shift. Allowing guests to eat seasonally, locally, and sustainably is kind of the entire purpose of the restaurant.
As you can probably surmise from its name, True Food Kitchen is all about serving real, healthy food. That means the meals are minimally processed and feature whole-food ingredients like sustainably sourced meats and seafood, fresh and local fruits and veggies, and whole grains packed with micronutrients. Take, for example, the ancient grain bowl. A base of superfood grains and miso-sesame sweet potatoes features layers of portobello mushrooms, snap peas, avocado, and charred onions tossed with hemp seeds, turmeric, and cilantro pumpkin seed pesto. The grilled sustainable salmon showcases the same pesto, plus smoked grains on the side, while the grilled Korean steak comes with some freshly harvested bok choy in a miso sesame vinaigrette.
